Tucked into a warehouse-style compound off Yejiazhai Road in Putuo, Butanchu (豚人 — literally 'Pig Person') takes its name and spiritual inspiration from the Kyoto Ichijoji ramen tradition. The menu is deliberately minimal: four broth options plotted on a spectrum from ultrarich pure pork-bone tonkotsu to a lighter half-strength dashi blend, with three noodle choices (thin, wrinkled, or wavy dragon noodles) and a handful of toppings. The full-strength tonkotsu (¥45) is so thick it coats every strand like a sauce — deeply delicious but undeniably heavy. One free refill of noodles is included. Local media and multiple food guides have named it the best ramen in Shanghai; the perennial queues are proof. Fried chicken (¥40) makes for a worthy side.
