Chef Fumio Yonezawa, formerly Chef de Cuisine at the Michelin three-star Jean-Georges Tokyo and founder of No Code Tokyo, crafts a seasonal menu that treats premium ingredients with quiet precision: think wagyu with truffle, housemade soy-glazed rice, and pristine sashimi dressed with Japanese citrus.
