Twin chefs Haru and Gohei Kishi were born in Paris to Japanese parents who operated Tagawa, a Japanese restaurant in France. Gohei studied Japanese culinary arts; Haru trained in French techniques — together they forged a culinary language that moves fluidly between kaiseki precision and French classical structure. Kappo Kappo's 11-course tasting menu at the Austin Proper Hotel takes only 25 guests at a time, offering A5 wagyu, pristine seafood, and seasonal Japanese ingredients interpreted through a bicultural lens. Opened in November 2025, it is already among Austin's most anticipated dining experiences. The name 'Kappo' refers to the intimate Japanese cooking style where the chef prepares dishes in front of diners.
