Uní opened in November 2024 at Store Kongensgade 42, representing the personal vision of Japanese chef Takashi Saito, who brings his heritage directly to the kitchen. Previously, Saito and sommelier Oliver Kudsk worked together at the now-closed Umami; Uní is their independent stage. The seasonal menu draws on close partnerships with small Danish producers — seaweed from Dansk Tang, mushrooms from Fungafarm — giving the food a distinctly Nordic grounding while Saito's Japanese techniques and philosophy shape every course. The result is a quiet, focused dining room in the heart of Copenhagen that feels unlike any other.
