Ramen to Bíiru opened its first location in Nørrebro in 2015, born from a love of Japanese ramen and Danish craft beer. The brains behind the project recruited Japanese ramen specialist Takuro Otani directly from Japan to ensure strict authenticity — Otani crafts shio, shoyu, and miso broths from scratch daily, with homemade noodles and hand-selected toppings. Japanese co-founder Daisuke Uki (also behind Bento Copenhagen) provides the cultural and culinary framework. Orders are placed at a retro vending machine evoking Japanese ramen shops, while Mikkeller taps and cans complete the experience. The chain has since expanded to six Copenhagen locations, but this Nørrebro original retains the neighbourhood spirit.
