Set in a serene minimalist space in Nordhavn, Sushi Anaba is one of Scandinavia's most rigorous sushi destinations. Chef-owner Mads Battefeld apprenticed at Tokyo's Sushi Sho under legendary itamae Hiroyuki Sato and with Izumi Kimura, absorbing the strict Edomae tradition before returning to Copenhagen. Just 13 seats face the hinoki counter, where each nigiri is pressed with body-temperature rice sourced from Niigata and topped with pristine fish from Danish and Norwegian waters. The restaurant earned its first Michelin Star in June 2025, making it one of the Nordic region's essential omakase destinations.
