About
Hideki Matsuhisa, born in Toyota, Japan in 1972 and trained as the son of a sushiman, arrived in Barcelona in the 1990s and quietly transformed the city's understanding of Japanese cuisine. His flagship Koy Shunka — the name translates as 'radiant fragrance of the season' — has held a Michelin star since 2013, when Matsuhisa became the first Japanese chef in Spain to receive this recognition. The omakase and counter tasting menus marry Japanese kaiseki principles with the finest Mediterranean ingredients: Palamós prawns, Catalan wild mushrooms and Iberian pork find their way into preparations that honour Japan's seasonal philosophy above all. Matsuhisa holds 2 Soles from Guía Repsol, was awarded the Chief of Mission Award by the Japanese Consulate-General in Barcelona in 2025, and serves as an official MAFF ambassador for Japanese gastronomy.
