Since 2016, Shiori Arai — born in Fukui Prefecture and trained in the Japanese kaiseki tradition — has welcomed exactly ten guests each evening into her minimalist basement restaurant in Berlin-Mitte. The 13–15-course tasting menu (€150) changes with the seasons and reflects the spirit of the Japanese tea ceremony. Advance reservations are required, and a single seating at 19:00 ensures focus and stillness — exactly as in Japan. Shiori is considered one of the most authentic Japanese restaurants in all of Germany.
