Nestled on Beethovenstraat in the heart of Amsterdam-Zuid — historically home to Japan's corporate expatriate community — Hatsune opened in 2024 under the guidance of chef Mitsuhiro Narita, formerly of the Tsuji Culinary Institute Group and a key figure behind Brushstroke in New York's Tribeca. The restaurant specialises in two styles: a Tempura Kaiseki course (€120) showcasing seasonal ingredients fried to paper-thin precision, and a Classic Kaiseki (€120–€180) following the traditional kaiseki sequence of sakizuke, mukōzuke, agemono, and shokuji. The kitchen even sources specially selected soft water to replicate the clean dashi essential to authentic Japanese cooking. This meticulous attention to craft — from seasonal wagyu additions to the hand-selected sake and wine pairings — makes Hatsune one of the most serious Japanese fine-dining destinations in the Netherlands.
