Love Sushi (瑷鮨) sits on the fifth floor of Plaza 66, Jing'an's most prestigious mall, reflecting the Sun-San group's highest tier of execution. Chef Ma Jianjian hails from Anhui and began his Japanese culinary career in 2004, spending years in Shenzhen before returning to Shanghai. His kaiseki-influenced omakase spans: silky king crab and shrimp chawanmushi; buttery scallop and shima aji sashimi; dry-aged and brined pigeon leg; spring bamboo, sea urchin, and shirako tempura; a palate cleanser of surf clams with dashi jelly; six pieces of nigiri including torched belly and yuzu-dressed scallop; plus a jumbo uni handroll. Floor manager Ayumi handles front-of-house with Japanese service sensibility. With only 10 counter seats and a four-seat private room, tables are limited and in high demand.
