Uni Shushi (单品寿司) represents Sun-San's vision of democratizing the Oyama-school omakase in Jing'an, where quality counters are scarce. Head chef Wang Yang trained directly under Sun-San and carries the same pedigree: meticulous fish sourcing, careful temperature and seasoning control, and a kaiseki-inflected structure moving from chawanmushi and sashimi through grilled dishes, tempura, six-plus pieces of nigiri, and a handroll finale. The ¥698 set includes generous helpings of uni, fatty tuna, and seasonal shellfish. The counter splits six seats at the bar and six in a private room, offering both an open-kitchen theater experience and a more intimate dining option. With two evening seatings, reservations are essential.
