Yamagata at 1636 Palisades Ave was opened in 2011 by Japanese sushi chef Kunio 'Yama' Koyama, who sold the restaurant to Korean owner Tom Choi upon his retirement around 2017. The NorthJersey.com review at the time of the ownership transfer noted that the sushi chef remains Japanese. The restaurant continues to serve sushi and omakase as a BYOB destination in Fort Lee.
