Ippudo NY East Village opened in 2008 at 65 Fourth Avenue as the first international location of Chikara no Moto Holdings, whose Fukuoka-born founder Shigemi Kawahara established the Ippudo brand in 1985. The restaurant holds a Michelin Bib Gourmand and is credited with sparking New York's contemporary ramen boom. The menu centers on Hakata tonkotsu — silky pork-bone broth with thin straight noodles — in Shiromaru and Akamaru variations.
