About
Ichiran Midtown opened in 2018 at 132 West 31st Street, between Penn Station and the Garment District. As with all Ichiran locations, each diner customizes their bowl via order form and eats in a solo booth behind a bamboo curtain — a system designed to focus attention entirely on the ramen. The tonkotsu broth follows Ichiran Inc.'s proprietary Fukuoka recipe.
Why it's on Washoku Guide
- Solo booth system — Japan's most distinctive ramen dining concept
- Fukuoka-origin tonkotsu broth, proprietary recipe
- Convenient Midtown location near Penn Station
- Full customization: noodle texture, richness, green onion, spice
