Zen Japanese Restaurant on Woodbine Avenue in Markham has been one of the GTA's most serious Japanese kitchens since 2000. Chef-owner Tatsuya Kawamura — who also trained many of today's Toronto chef-owners — runs a menu that spans formal kaiseki, sushi, and traditional à la carte. A de facto training ground for the city's Japanese cooks.
