Opened in November 2012 in the Entertainment District, JaBistro quickly distinguished itself as a temple of precision sushi in a neighbourhood better known for clubs. Chef Koji Tashiro — Japanese-born, Tsukiji-trained — brings 12-plus years of sushi mastery to a chic space of light wood panels and exposed brick. His aburi technique, perfected at Vancouver's Miku, involves glazing fish with a proprietary sauce before torching it to unlock deep umami notes. Fish is flown in fresh daily from Japan and global waters. The omakase menu and seven-piece nigiri flights are highlights, and house-grated wasabi and hand-pressed soy sauce underscore the commitment to authenticity. JaBistro is part of the Kinka Family restaurant group.
