Shoushin opened in October 2015 in Bedford Park under chef-owner Jackie Lin, who apprenticed for over a decade under Seiichi Kashiwabara before launching his own counter. The restaurant holds a Michelin One Star for four consecutive years (2022–2025) and seats just 12 at a luminous hinoki wood counter imported from Japan. Jackie Lin's philosophy centers on calibrating the harmony between neta and shari using exclusively wild-caught fish, the majority sourced directly from Japan. The Sakura omakase starts at $420, while the Obsession Perfection Omakase begins at $560, leaving every decision in the chef's hands. Reservations are handled exclusively through Tock.
