About
Chef-owner Tatsu Nishino was born and raised in Kyoto and trained at the Nihon Chorishi Gakko culinary school in Osaka before moving to Los Angeles, where he spent years working as a chef at Matsuhisa under the legendary Nobu Matsuhisa. In 1995, he and his wife Eri settled in Seattle and opened Nishino, bringing a refined, ingredient-driven approach to Japanese cuisine that blends classical technique with Pacific Northwest influences. The result is a menu that encompasses exceptional sushi, sashimi, and cooked dishes including foie gras with seared tuna and halibut cheek curry. Nishino remains one of Seattle's most respected dining institutions after 30 years.
