About
Chef Hideaki Taneda was born in Miyazaki Prefecture, Japan, and trained for seven years in Tokyo in both kaiseki and sushi before spending 15 years as executive sushi chef at I Love Sushi in Seattle. He opened his own 9-seat restaurant in 2018 inside a historic 1918 Capitol Hill building, creating one of the only kaiseki-sushi fusion omakase experiences in the United States. With only two seatings per evening Wednesday through Sunday, Taneda tickets release once a month on Tock, making them among the hardest reservations to secure in the Pacific Northwest. Meticulous seasonal Japanese ingredients and a deeply personal chef-guest dynamic define the experience.
