Chef Keiji Tsukasaki was born and raised in Fukui Prefecture, Japan — a region celebrated for its seafood culture — before training at Sushi Kashiba under Shiro Kashiba, and also at Shiro's Sushi and Sushi Kappo Tamura. He opened Ltd Edition Sushi in 2021 in a modest Capitol Hill space that belies the extraordinary quality within.
