Sushi Shunei in Montmartre is led by Chizuko Kimura, the first female sushi chef in the world to earn a Michelin star, who carries forward the dream of her late husband Shunei Kimura at this intimate 9-seat hinoki counter. Opened in 2021, the restaurant has regained its 1 Michelin star in 2025 after a brief hiatus.

About
Sushi Shunei was opened in 2021 by Japanese sushi master Shunei Kimura and his wife Chizuko, with an original Michelin star awarded just nine months after opening. Following Shunei's passing, Chizuko took sole charge of the counter, bringing in master sushi chef Takeshi Morooka (formerly of Ginza Onodera) as her mentor. Her journey — from tour guide to sushi itamae — is extraordinary by any standard, and in March 2025 she became the first female sushi chef in the world to be awarded a Michelin star. The restaurant seats just nine guests in an intimate space of hinoki cypress and sparse Japanese design, in the bohemian heart of Montmartre. Two services nightly and a Saturday lunch are offered, by reservation only, in pure edomae tradition.
