Charbon Kunitoraya at 5 rue Villédo is the gastronomic flagship of Kōchi-born chef Masafumi Nomoto, the pioneer who brought authentic Japanese noodles to Paris. Where his original Kunitoraya at number 1 focuses on casual udon, Charbon is a destination for refined dining: the Michelin-listed restaurant serves predominantly multi-course tasting menus that showcase Nomoto's skill with traditional Japanese cooking. The signature Poulet de Bresse yakitori — among the finest in Paris — headlines a menu of seasonal Japanese dishes. The timber-façaded dining room is a masterwork of controlled nostalgia: old zinc counter, Paris Métro-style tiling, antique mirrors, and long solid wood tables create a setting that is simultaneously French bistro heritage and quietly Japanese.
