Born in 2018 from the meeting of sushi master Yasunari Okazaki — formerly of a Ginza counter where Yannick Alléno first discovered him — and the 3-star chef's iconic Pavillon Ledoyen, L'Abysse is the jewel of Parisian sushi dining. Okazaki holds absolute creative sovereignty over the omakase, which unfolds across 16 or more courses including pristine nigiri, exquisite sashimi, and Alléno-influenced preparations that never overshadow the fish. The restaurant earned its first Michelin star six months after opening and its second in 2020. The 12-seat hinoki counter and intimate dining rooms are housed in the neoclassical Pavillon Ledoyen on the edge of the Champs-Élysées. The sake list, curated through Japan Exquise France, is among the finest in France.
