About
Opened in July 2023 within the Dorchester Collection's 45 Park Lane, Sushi Kanesaka is the London outpost of master chef Shinji Kanesaka's legendary two-Michelin-starred Ginza original in Tokyo. Kanesaka studied under one of Japan's most celebrated sushi masters before building a global reputation from his Ginza counter; London head chef Hirotaka Wada carries his exacting Edomae ethos to Mayfair, working with the finest imported Japanese fish and aged vinegared rice. The intimate Mayfair counter earned its first UK Michelin star, offering evening-only omakase sittings that rank among the most expensive and exclusive in London.
