About
Tewatashi means 'to pass by hand' in Japanese — the traditional Edomae technique where the sushi chef places each piece of nigiri directly into the guest's hand across the counter. This practice, central to authentic high-end sushi culture in Japan, is rare in Europe and gives Tewatashi its distinctive identity. Chef Yuji is Japanese and the restaurant is owned by Seiji, making it one of the very few genuinely Japanese-owned omakase counters in the Netherlands.
