Opened in 2022 by the Japanese-owned Hospitality United Group, Sushi HANABi occupies the first floor above its yakitori sibling at the iconic Leidseplein address. The concept is deliberately focused: no gluten-free, vegan, or alcohol-free adaptations are offered, reflecting a commitment to the authentic omakase philosophy. Chef Hideo Kuribara — whose Instagram handle identifies him as a genuine Japanese sushi chef — guides diners through courses anchored by premium bluefin tuna, seasonal nigiri, chawanmushi, miso soup, and tamago. A €90 course and a premium €130 course are available, both supported by sake and wine pairings. Deposits per person are required to reflect the kitchen's daily fresh purchasing.
