Chef-owner Tomoyasu Kamo is Japanese-born and trained at the celebrated Tagawa restaurant in Tokyo before establishing his own address in Brussels' Ixelles district. The intimate restaurant operates strictly on omakase terms with entry windows of 18:30–20:00 on weekday evenings, and Thursday–Friday lunches by reservation only. The philosophy — working with Belgium's finest seasonal ingredients through Japanese precision technique to maximise umami — results in sashimi, made-to-order nigiri and multi-course tasting menus of exceptional refinement. Kamo has also expanded his Japanese culinary universe in Brussels with the Kamo Poissonnerie (fishmonger) next door and the Menma ramen spin-off, cementing his status as the city's most influential Japanese chef.
