About
Owner Hiro Miura came to Amsterdam in 2008 after a career in architecture including work with Universal Studio Japan, and by 2014 had channelled his passion for design and Japanese cuisine into Ku Kitchen & Bar. The sushi bar is helmed by Yayoi Sugiyama, a Japanese-born chef who refined her craft through Shirasagi in The Hague — one of the Netherlands' most respected Japanese kitchens. Fellow chef Sanae Ogawa trained at the legendary Yamazato in Hotel Okura Tokyo. Together they deliver traditional nigiri, sashimi, and cooked Japanese dishes anchored by a curated sake and cocktail list. The Centrum location makes it an accessible choice for both business dining and exploration.
