Diners choose between a shoyu (soy) or miso base, then select a fat level — assari (light), futsuu (medium), or kotteri (rich) — before adding extras like chashu pork, seasoned egg, spicy spring onion, or even a pat of butter, a nod to its Paris home. A single Japanese chef stands before the broth pot, tasting and refining throughout service. No reservations are taken, and queues are the norm from noon onwards. Portions are generous and prices are among the lowest in the neighbourhood.
