Ippudo République is the most easterly of the three Ippudo restaurants in Paris, positioned on the lively place Jacques Bonsergent near the Canal Saint-Martin in the 10th arrondissement. As with the other Paris Ippudo locations, the menu centres on the brand's Fukuoka-origin tonkotsu broths — Shiromaru (classic), Akamaru (enriched with miso paste), and Yokohama-style (broader pork and chicken broth) — alongside hirata buns, Japanese fried chicken (kara-age), gyoza, and donburi rice bowls. The slightly off-centre location typically means shorter queues than the Louvre and Saint-Germain branches.
