Daihachi opened its doors in October 1993, making it Vienna's longest-established sushi bar with over 30 years of continuous operation. Owner and sushi master Kuo-Jung 'Peter' Pan trained in Japan and applies a pure, precision-focused philosophy: only sushi, sashimi and nigiri, each composed with meticulous knife work and first-class fish. The restaurant has recently relocated to the Anantara Palais Hansen Vienna Hotel on Schottenring — steps from the Japanese embassy — and its counter seats fill quickly with Japanese diplomats, expats and Viennese sushi aficionados. Gault&Millau has praised Pan's 'precision over spectacle' approach.
