Chef-owner Masahito Udagawa opened Hidori on Burggasse as his personal expression of Japanese izakaya culture in Vienna's culturally vibrant Neubau district. Born near Tokyo, Udagawa built his kitchen around authenticity: an open kitchen where guests can watch preparation, traditional seiza and agura floor seating for a genuine tatami-style experience, and a menu spanning yakitori, sushi, sashimi, ramen and seasonal specialities. The TripAdvisor listing specifically notes that dishes are 'cooked by Japanese chefs,' and the restaurant remains active with regular Instagram posts through 2024–2025.
