Operating from inside Jizakana restaurant in Cammeray, Sushi Oe distils Japanese omakase to its purest form: one chef, six seats, and an unwavering commitment to quality. Chef Toshihiko Oe brings over 30 years of Japanese culinary experience to each night's sitting, sourcing premium seafood daily from Sydney Fish Market through specialist Japanese fishmonger Narito Ishii of Kagoshima. The 27-course progression showcases the breadth of seasonal seafood available in Australian waters, elevated by classic Edomae technique. Oe clears each plate himself, replenishes pickled ginger personally, and maintains the quiet, focused ritual that defines great sushi-ya dining. The BYO policy (no spirits), strict punctuality rules, and no-dietary-modification stance reflect a chef who places the integrity of the experience above all else.
