Perched on level 8 of the revitalised 25 Martin Place dining precinct, Kazan Dining occupies one of Sydney's most architecturally striking Japanese restaurant spaces. Executive Chef Shinya Nakano trained in Kyoto under a fifth-generation sushi master and earned the same master sushi title — a designation that places him among the most credentialled sushi chefs working in Australia. Before Kazan, Nakano worked at Kisume Melbourne and Nobu, building a portfolio that spans two continents and multiple Japanese traditions. The menu balances a robata grill programme (coal-kissed meats, seafood and vegetables), an elaborate sushi and sashimi offering, and occasional kaiseki-style tasting menus. A comprehensive sake, Japanese whisky, and cocktail list rounds out the experience.
