Choji Omakase is an intimate upstairs counter in Chatswood where Japanese executive chef Takashi Yamamoto — a self-described 'meat-otaku' with over two decades of yakiniku and kaiseki training in Japan — guides diners through a wagyu-focused omakase that integrates the discipline of Japanese kaiseki with the theatrics of premium cattle. Reservations are released on the 15th of each month.

About
Chef Takashi Yamamoto brings a uniquely focused culinary philosophy to Choji Omakase: more than 20 years training in both yakiniku and kaiseki in Japan has produced a chef deeply versed in the transformative qualities of fire, heat, and exceptional beef. The counter sits above Choji Yakiniku on Victoria Avenue in Chatswood, accessible through the ground-floor yakiniku restaurant and ascending to a more intimate, curated omakase setting. Co-founded with sushi master Tomoyuki Matsuya through the Tabero Group — Japanese-owned and operated — the concept has attracted a dedicated following from both the Japanese diaspora in Chatswood and Sydney's broader omakase community. Reservations are released on the 15th of each month online only via chefstable.au. The menu starts at 18:30 sharp; punctuality is required.
Why it's on Washoku Guide
- Chef Takashi Yamamoto's dual mastery of yakiniku and kaiseki — trained over 20-plus years in Japan — creates an omakase format unlike any other in Sydney.
- The Tabero Group brings genuine Japanese ownership and operational ethos to the Chatswood venue, reflecting the Japanese community's deep roots in the area.
- Choji's wagyu omakase programme offers one of Sydney's most distinctive approaches to premium beef dining, integrating robata technique with kaiseki presentation principles.
Reservations released on the 15th of each month at 12pm online at chefstable.au. Omakase starts 18:30 sharp; arrive 15 minutes early. Enter via Choji Yakiniku ground floor.
