About
Chef-owner Kimitaka Azuma was born and raised in Kyushu, trained in sushi and kappo restaurants in Tokyo, and arrived in Australia in 1991. He opened his eponymous restaurant at Chifley Tower in Sydney's CBD, and for over three decades it has remained the city's benchmark for traditional Japanese fine dining. The kaiseki menu at AUD 300 per person is the showpiece: a choreographed succession of seasonal courses rooted in Japanese culinary philosophy, using the finest local seafood and produce. The à la carte menu spans the full breadth of Japanese cuisine — sashimi, sushi, grilled and simmered dishes — making Azuma equally suited to a business lunch as to a celebratory dinner.
