Narito Ishii has spent over two decades texting pre-dawn catch reports to Sydney's finest omakase chefs; now he is the chef. Seated at just eight places, guests experience a procession of nigiri and seasonal courses assembled from fish selected personally by Ishii at the morning auction moments before service. The setting inside the Gyokuu dining precinct at the New Sydney Fish Market places the counter at the literal source, affording a provenance story no other omakase in Australia can match. Portions are refined but generous, reflecting Ishii's deep appreciation for the fishermen whose work he has championed for a quarter century.
