Diners descend into a dramatic vaulted cellar where a Japanese-inspired dining platform encourages guests to remove their shoes, instantly transporting them from the Latin Quarter to Japan. Nabeta's cuisine deploys traditional Japanese techniques — smoking, fermenting, drying, marinating — applied to premium French ingredients like mizuna, ponzu, sake, and soya.
