EnYaa Saké & Champagne opened in November 2016, establishing itself as one of the most intellectually rigorous Japanese restaurants in Paris. Chef Daisuke Endo spent 23 years mastering Kyoto-style kaiseki cuisine before arriving in the French capital, and his cooking reflects that rigorous classical foundation: konbu and dashi form the backbone of broths, seasonal ingredients are treated with absolute fidelity to their natural flavors, and French produce — foie gras, Loire fish, Breton shellfish — is elevated through Japanese technique. The restaurant sits within one of Paris's most atmospheric streets, the covered galleries of the Palais Royal, and is jointly owned by Japanese entrepreneur Kaï Nakamura. The lunch service offers à la carte dishes, while dinner moves toward a tasting format.
