Opened in March 2025 at The Dubai EDITION hotel on Fountain Street, KEN by Kamatsuda is the intimate labour of a Japanese chef-owner who built his career in high-end restaurants across Japan — culminating in running an exclusive members-only venue — before bringing his philosophy to Dubai. Chef Ken Kamatsuda is guided by the principle of ishoku-dogen (food and medicine sharing the same origin), crafting dishes that are simultaneously indulgent and mindful. The open kitchen seats guests in an interactive setting where Kamatsuda and his team prepare each course in front of diners. Three omakase tiers are available: Hajime (AED 1,350 per person, wagyu and seasonal fish), Gokan (AED 2,500, five-senses, 13 dishes) and Maboroshi (AED 5,000, ultra-premium Awa Wagyu, king crab, and uni). Rare Awa Wagyu from Tokushima Prefecture and top-grade seafood flown from Toyosu are sourced directly from Japan. Theatrical dessert presentations and live calligraphy by Bisen Aoyagi add cultural dimension to the experience.
