Nestled on the fourth floor of the Bulgari Resort Dubai on Jumeirah Bay Island, Hōseki seats just 17 guests at an intimate counter overlooking the Dubai skyline. Chef Masahiro Sugiyama, a sixth-generation sushi itamae who trained at the Tokyo two-Michelin-star restaurant Sushi Kanesaka, opened Hōseki in 2017 as the Middle East's first dedicated omakase destination. Ingredients — premium fish, seasonal vegetables, and artisanal Japanese produce — are sourced directly from Tokyo's Toyosu Market, often arriving daily. The restaurant achieved its first Michelin star in 2022 and has retained it every year since, while also ranking 26th in the World's 50 Best Restaurants MENA 2023. Two tasting menus are available: the Hisui (AED 1,750) and the Ruri (AED 2,250), each representing a supreme exploration of Edomae technique and Japanese seasonality.
