Konjiki Hototogisu is Dubai's only Michelin Bib Gourmand ramen restaurant, a direct export from the original Tokyo shop founded in a Shibuya alley by ramen master Atsushi Yamamoto in 2006. The signature shoyu and shio clam ramen — handmade noodles, no MSG, no ready-made bases — now serves Dubai's Mall of the Emirates.

About
Chef Atsushi Yamamoto opened the original Konjiki Hototogisu in a tiny 8-seat Shibuya alley in 2006, built on a philosophy of obsessive experimentation and pure ingredient integrity. After winning Michelin Bib Gourmand recognition in Tokyo from 2015–2018 and a full Michelin star from 2019–2023, he began an international expansion to Toronto, Singapore, Hong Kong, and Dubai, where the Mall of the Emirates location opened in July 2023. The Dubai branch has earned Michelin Bib Gourmand in both 2024 and 2025, making it the emirate's most-decorated ramen restaurant. All noodles and flavoured sauces are handmade in-house; no MSG and no pre-made bases are used. The signature bowls — shoyu ramen with dried bonito, clam, and truffle, and shio ramen with clam-enriched broth — reflect Yamamoto's background in soba traditions. The menu also includes gyoza, izakaya bites, and rice dishes. Prices start at AED 72 for ramen. A second UAE location at Nakheel Mall is also open.
