For over two decades, Ryo's Noodles on Falcon Street has stood as Sydney's foundational Japanese ramen experience — the venue that proved a tiny, no-fuss ramen shop could build a city-defining queue through nothing but the quality of its broth. Fukuoka-born owner-chef Ryo Horii launched the restaurant in 2003 with a menu anchored by classic tonkotsu and Tokyo-style soy broths, supplemented by gyoza, karaage, and rice dishes. The laminated card menu and shared tables remain unchanged from day one, as does the rapid turnover philosophy: eat well, pay quickly, make room for the next customer. A second location at 106 Ebley Street, Bondi Junction, opened in 2015. Ryo's is frequently cited by Japanese visitors and ramen connoisseurs as one of the most authentic Japanese ramen experiences available outside Japan, a reputation built on consistency and the personal dedication of its founder.
