Hide Tsuboi, who honed his craft in Tokyo, opened his first Sydney ramen shop under the Hakata-Maru name in Chatswood before expanding to Darling Square's Nicolle Walk under the Hakatamon banner. The Haymarket location occupies a ground-floor position within the contemporary Darling Square precinct, offering both indoor and outdoor seating. True to the Hakata tradition, the kitchen simmers tonkotsu broth for hours to achieve a milky, collagen-rich depth, and guests can customise noodle firmness and richness level. The menu is deliberately concise — focused on doing tonkotsu superbly rather than spanning every regional style — complemented by seasonal rice bowls and side dishes.
