Hakata-Maru Ramen is the ramen arm of Toridoll Holdings Corporation, one of Japan's largest restaurant groups listed on the Tokyo Stock Exchange. After their Market City location closed, Toridoll secured a prominent spot in Darling Square — one of Sydney's newest urban dining precincts — where the concept relaunched in 2019 to considerable acclaim. The kitchen specialises in Hakata-style tonkotsu: thin, straight noodles in a milky, intensely flavoured pork bone broth cooked for hours. The signature black garlic oil adds a smoky umami depth rarely found in Sydney. TripAdvisor reviewers consistently note the restaurant is staffed entirely by Japanese personnel from front-of-house to kitchen.
