After establishing Melbourne's most acclaimed tonkotsu ramen over many years, Hakata Gensuke opened its Sydney outpost at Regent Place in August 2023 in direct response to visitors who had experienced the Melbourne original and petitioned for a Sydney location. Japanese founder Kousuke Yoshimura's Ikkousha Co. Ltd brings the same Hakata tonkotsu philosophy — rich, sustained bone broth, thin straight noodles, carefully calibrated toppings — to the central Sydney mall adjacent to George Street. The restaurant's strict walk-in only policy and wide seven-days trading hours, including 10 pm closing on weekends, reflect a confident, quality-driven operating model that prioritises freshness of service over reservation convenience. A 10% weekend surcharge and 15% public holiday surcharge apply.
