Tucked under a commercial building on the Pacific Highway side of Chatswood station, Hakata-Maru is the intimate original shop through which Hide Tsuboi established his Sydney ramen reputation. Tsuboi trained in Tokyo and channelled that experience into a focused Hakata-style menu: a rich, slow-simmered tonkotsu with customisable noodle firmness, free garlic and sesame condiments, and a handful of rice dishes and gyoza. Reviewers consistently note the visible pots of simmering stock as a marker of authenticity, and a decade of mostly positive feedback places it in Chatswood's top 10 restaurants. It rebranded over time from Hakata-Maru to carry the Hakatamon identity at its newer Darling Square branch, but the Chatswood shop retains the Hakata-Maru name and its devoted neighbourhood following.
