About
Nichi Getsu Do opened in November 2023, born from a 30-year friendship between Curtis Cifuentes and Kobayashi, the Japanese founder of the original Nichi Getsu Do ramen shops in Saitama. Kobayashi co-owns the Sydney restaurant and the menu draws directly from his Japanese originals, adapted thoughtfully for Australian palates. The headline dish is the Special Miso Ramen — a rich, complex broth made from six types of miso imported from Japan, topped with grilled chashu, a soft-boiled egg, and walnut rayu. Tucked under an apartment block on Kent Street, the shop has quietly earned a reputation as one of the CBD's best ramen finds, with regulars likening it to the best bowls they've encountered in Japan.
