When owner-chef Kosuke expanded from his North Strathfield honten to Rosebery in 2025, he deliberately crafted an entirely separate menu rather than simply replicating the original. The 'Revised in Rosebery' concept features tonkotsu-gyokai blends, smoked iekei, and dipping noodles not available at the flagship, reflecting the chef's restless pursuit of new ramen forms. Open Wednesday to Sunday, the compact shopfront fills quickly and walk-ins are welcomed only when capacity allows. The move to Rosebery places Kosuke's cooking within reach of Sydney's inner south dining community while keeping the intimately chef-led atmosphere that defines the brand. Both locations temporarily close together during the chef's annual break, reaffirming that the quality is inseparable from the person behind the stove.
