About
Established in 1998 by RE&S Enterprises, a Singapore-headquartered hospitality group created in 1988 to extend authentic Japanese food culture internationally, Ichibanboshi has occupied Level 2 of The Galeries near Town Hall station for over two decades. The kitchen rolls noodles in-house daily and sources many core ingredients from Japan, maintaining the parent company's longstanding mandate of avoiding shortcuts. The menu is deliberately accessible — spanning ramen, gyoza, chicken katsu bowls, tantanmen, and sukiyaki donburi — to serve both regular office workers and visitors. Ichibanboshi has generated a devoted following, reflected in over 6 decades of positive Yelp reviews, and remains among the few Sydney Japanese restaurants that have maintained daily full-service trading from 11am to 9pm for more than 25 years. A second Sydney branch operates in Bondi Junction.
Why it's on Washoku Guide
- Operating since 1998, Ichibanboshi is one of Sydney's oldest continuously operating Japanese ramen restaurants, with a 25-year track record of quality.
- Owned by RE&S Enterprises, a Japanese-dining-focused group founded specifically to bring authentic Japanese food culture to international markets.
- House-rolled noodles prepared daily set Ichibanboshi apart from competitors who rely on pre-made noodle suppliers.
- Gyoza have been independently cited as 'best in Sydney' by multiple reviewers, giving the menu a secondary signature beyond its ramen.
RE&S Enterprises Pte Ltd (Singapore) is the parent entity; the brand was founded with explicit Japanese-dining mandate. The Galeries branch phone: (02) 9262 7677. Also note the 'Sydney Express' (ground floor Galeries) is a separate smaller format of the same brand.
