Established in 1998 by RE&S Enterprises, a Singapore-headquartered hospitality group created in 1988 to extend authentic Japanese food culture internationally, Ichibanboshi has occupied Level 2 of The Galeries near Town Hall station for over two decades. The kitchen rolls noodles in-house daily and sources many core ingredients from Japan, maintaining the parent company's longstanding mandate of avoiding shortcuts. The menu is deliberately accessible — spanning ramen, gyoza, chicken katsu bowls, tantanmen, and sukiyaki donburi — to serve both regular office workers and visitors. Ichibanboshi has generated a devoted following, reflected in over 6 decades of positive Yelp reviews, and remains among the few Sydney Japanese restaurants that have maintained daily full-service trading from 11am to 9pm for more than 25 years. A second Sydney branch operates in Bondi Junction.
